Maitake (Grifola frondosa), also known as “Hen of the Woods” or “Dancing Mushroom” is an edible mushroom that grows in Japan, China, and North America. It is full of beta-glucans, antioxidants, and a variety of beneficial compounds including niacin, riboflavin, vitamin D, phosphorus, and potassium. It’s considered an adaptogen, and it may promote a healthy stress response and help to activate the immune system.
Fun fact: When fully grown, Maitake can weigh up to 100 pounds and is said to have gotten its name after people danced with happiness upon finding it in the wild.
